We are thrilled to offer you Tipperary Cheddar flavored with Irish Brown Porter Beer from Mitchelstown (Baile Mhistéala in Irish), in rural County Cork, right at the borders of County Tipperary and County Limerick, in south-central Ireland.

Since 1919, when the Dairygold Co-operative Society began, the cheeses from this region have grown to become the most sought after in Ireland – leading the market in the production of Irish cheeses. In fact, in 1932, Mitchelstown was the first dairy company ever to open a modern cheese plant to keep up with demand. Most important, it has access to the finest Irish milk – all from Tipperary’s world-famous, grass-fed cows. The cows’ claim to fame is due to the area’s temperate climate, ample fresh water, and lush, fertile green pastures for grazing – all of which are essential to creating the best raw material for rich, full-flavored cheeses like this porter-infused cheddar.

Made from pasteurized, beta carotene rich cow’s milk and vegetable rennet, this semi-soft cheddar is aged for 12 months. Visually, this cheese looks like marble – a mosaic of pale yellow and brown – and the smooth paste is ultra-creamy. It is pleasantly sharp, buttery, and chocolaty from the porter.

Remove this cheese from the refrigerator an hour before serving it, as its flavors are best experienced at room temperature or warmer. With its striking colors and unique flavor profile, it will be a standout on your charcuterie and cheeseboard. Slice and serve it on its own as an hors d’oeuvre alongside a veggie salad, fruit plate, or traditional Irish breads like Barmbrack or fruit soda. This cheddar is also a one-of-a-kind melting cheese – think fondue, grilled cheese sandwiches on Irish wheaten bread, or a burger topping. The obvious drink pairing is an Irish porter or a Black and Tan, but try it also with other Irish drinks like cider, whiskey, or cream liqueur.
